This is a variation of a classic olive oil, apple cider vinegar salad dressing. Camu camu is a great substitute for the tart and sour taste of lemons but provides much more vitamin C: just ½ teaspoon of 30:1 Camu Camu powder will provide 360 milligrams of whole food vitamin C, making this an incredibly simple, antioxidant-rich salad dressing or veggie dip.

 

Whisk all ingredients together in a bowl and drizzle over your favourite salad or use as a dip.

 

Makes about 1/3 cup of dressing or dip
