1 sockeye salmon fillet
2 cups spinach leaves
1 tablespoon olive oil
Salt and Pepper to taste
Directions
  1. Preheat oven to 400°F (200°C)
  2. Place salmon fillet on a lined baking sheet
  3. Drizzle with olive oil, add salt anf pepper
  4. Bake for 12 - 15 minutes
  5. In a pan, cook spinach with olive oil for 3 minutes
  6. Serve salmon with cooked spinach on the side.
