1 sockeye salmon fillet
2 cups spinach leaves
1 tablespoon olive oil
Salt and Pepper to taste
Directions
- Preheat oven to 400°F (200°C)
- Place salmon fillet on a lined baking sheet
- Drizzle with olive oil, add salt anf pepper
- Bake for 12 - 15 minutes
- In a pan, cook spinach with olive oil for 3 minutes
- Serve salmon with cooked spinach on the side.
