Ingredients
2 Vegetable broth cubes
1 large Carrot
1 Leek
1 medium Red beet
2 Celery stalks
1 cup chopped Parsley
1/2 cup Green onion
1 tsp. minced Garlic
1 Bay leaf
6 cups Water
Directions

Wash & chop vegetables, preferably organic varieties, and add to boiling water. Simmer for 30 minutes covered or until vegetables are cooked through. For added nutrition add 1 can of rinsed cannellini beans and 1 cup cooked pearl barley.
