Directions

The delicious dinner comes together in under 30 minutes. Make it a complete meal by serving it with baby greens dressed with a simple balsamic vinaigrette. Serves 4.

 

Bring a large pot of salted water to a boil. Cook gnocchi until they begin to float. Strain.

 

As the gnocchi cooks, heat butter and oil over medium heat in a large frying pan. Add garlic and sauté until fragrant. Add prawns and lemon zest and continue to sauté until prawns are pink and almost cooked through.

 

Add cooked gnocchi, lemon juice and kale to the pan. Sauté for one minute until kale is glossy and bright green. Season with salt and lots of freshly cracked pepper.

 

Serve topped with parmesan.
