Ingredients
Russet Potatoes
Yellow Onion
Chicken or Veggie Stock
Corn on the Cob
White Wine
Olive Oil
Salt
Directions
1. In a heavy saucepan warm the olive oil and brown onions.
2. When brown add potatoes, wine, stock and water. Bring to a boil and simmer for approximately 20 minutes.
3. Remove kernels from raw cob and add to soup. Simmer for 5 more minutes.
4. Add salt and if desired freshly cracked pepper. Serve warm.
