Get in gear for summer entertaining with these fresh and easy to prepare salsas. Use them as dips, or try them as a topping on your barbequed meat or fish.

Dave’s Simple Salsas – 3 types

Ingredients
4 medium vine ripened Tomatoes
1/2 cup diced Red onion
125 ml chopped fresh Cilantro
Juice of 1/2 a Lime
30 ml Extra virgin olive oil
2 large Dill pickles (optional)
1 clove Garlic
1 large Mango (optional)
1/2 cup Sweet onion (optional)
1 jalapeno pepper (optional)
Directions

Seed tomatoes and chop finely (if making Mango or Pickle, dice into small to medium chunks).

Dice onion.

Chop cilantro finely. Seed and chop Jalapeno finely.

Mix in large bowl and add olive oil, juice from lime, and salt and pepper to taste. Refrigerate until ready to use.

Tart Dill Pickle Salsa:

Same as the Tomato Salsa but use 2 large Dill pickles and only 3 tomatoes

1 clove fresh garlic- finely chopped. 

 

Sweet Mango Salsa:

Same as the Tomato Salsa but use1 large Mango, 2 tomatoes and 200-250ml Sweet Onion (Vidalia,Walla Walla, Maui Sweet, Texas 1015 or similar)
