Melt butter in heavy saucepan. Add onions, garlic and oregano. Season with sea salt and freshly ground pepper. Stir over medium heat for 5 minutes or until onion is soft. Add cauliflower and parsley, cook for 10 minutes stirring occasionally.
Add stock and simmer for 20 minutes until cauliflower is tender. Reduce heat and add Stilton until well combined. Add milk and cook until just heated through. Ladle soup into bowls, top with cream, and serve with Stilton sourdough toast on the side.
