Strawberry Balsamic Basil Chicken

Directions
Ingredients:
- 4 large chicken breasts
- 2 tbsp olive oil
- 1 tbsp garlic, minced
- 1/4 cup balsamic vinegar
- Salt & pepper, to taste
- 2 cups fresh strawberries, sliced
- 2 cups cucumber, sliced
- 1/4 cup fresh basil, chopped
Blueberry Glaze
- 1 cup blueberries, frozen
- 2 tablespoons butter
- 1/4 cup balsamic vinegar
- 1 lemon, juiced
- 4 tbsp honey
Directions:
- Prepare the marinade. In a bowl, combine the olive oil, balsamic vinegar, garlic, salt and pepper in a dish and mix until combined. Place the chicken breasts in a large zip-lock bag and pour the marinade over the top. Seal the bag and massage the marinade on to the chicken breasts so that they are evenly coated. Place the bag in the fridge and marinate for minimum hour, or over night.
- Once the chicken has marinated for the desired time, being by preparing the blueberry glaze. Add berries, balsamic, lemon juice, butter, and honey to a small saucepan. Over low heat, simmer until sauce begins to thicken, approximately 10 minutes. Season with salt & pepper, to taste. Remove from heat. Mash up the blueberries if you desire a more textured sauce or blend for a smoother sauce. Set to the side.
- Next, prepare the chicken. This can be done in a skillet or grill. Remove the chicken breasts from the marinade and discard any excess marinade. Place the breasts on the grill and cook, flipping halfway through, until the breasts reach an internal temperature of 165˚F. Remove from heat.
- Toss together strawberries, cucumber and basil. Top each chicken breast with strawberry mixture, and salt and pepper to taste. Add a drizzle of the blueberry glaze and enjoy!
