Garlic Prawn Gnocchi

Ingredients
500g gnocchi
2 tsp salted butter + extra for finishing
1 tbsp extra virgin olive oil
3-4 cloves garlic, minced
1 lemon (juice + zest)
300g prawns, peeled and deveined
2 cups kale, stems removed and roughly chopped
1/3 cup freshly grated parmesan cheese
Directions
- Cook gnocchi
- Bring a pot of salted water to boil.
- Add gnocchi and cook per package instructions until they float (or are tender). Drain and set aside.
- Sauté prawns
- In a large skillet over medium heat, heat olive oil and 1 tsp butter.
- Add prawns, season with a pinch of salt & pepper. Cook ~1–2 minutes per side until just opaque. Remove and set aside.
- Make garlic-kale sauce
- In the same skillet, add remaining butter. Add minced garlic, sauté for about 30 seconds until fragrant (don’t let it burn).
- Add chopped kale, toss with garlic & butter until wilted (~2–3 minutes).
- Combine everything
- Return prawns to the skillet. Add drained gnocchi. Toss gently.
- Add lemon zest & juice. Stir to combine and warm through.
- Finish & serve
- Remove from heat. Sprinkle Parmesan over top, toss again so it melts slightly.
- Taste, add more salt & pepper if needed. Serve hot.
