Garlic Prawn Gnocchi

Ingredients
500g gnocchi
2 tsp salted butter + extra for finishing
1 tbsp extra virgin olive oil
3-4 cloves garlic, minced
1 lemon (juice + zest)
300g prawns, peeled and deveined
2 cups kale, stems removed and roughly chopped
1/3 cup freshly grated parmesan cheese
Directions
  1. Cook gnocchi
    1. Bring a pot of salted water to boil.
    2. Add gnocchi and cook per package instructions until they float (or are tender). Drain and set aside.
  2. Sauté prawns
    1. In a large skillet over medium heat, heat olive oil and 1 tsp butter.
    2. Add prawns, season with a pinch of salt & pepper. Cook ~1–2 minutes per side until just opaque. Remove and set aside.
  3. Make garlic-kale sauce
    1. In the same skillet, add remaining butter. Add minced garlic, sauté for about 30 seconds until fragrant (don’t let it burn).
    2. Add chopped kale, toss with garlic & butter until wilted (~2–3 minutes).
  4. Combine everything
    1. Return prawns to the skillet. Add drained gnocchi. Toss gently.
    2. Add lemon zest & juice. Stir to combine and warm through.
  5. Finish & serve
    1. Remove from heat. Sprinkle Parmesan over top, toss again so it melts slightly.
    2. Taste, add more salt & pepper if needed. Serve hot.
