Ingredients
1 boneless, skinless chicken breast
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp poultry seasoning
300g bag of Olivieri Skillet Gnocchi
1 tbsp olive oil
1/4-1/2 cup milk
1-2 tbsp pesto
2-4tbsp Parmesan cheese
1 tbsp light cream cheese (optional)
1/4 tsp garlic powder
Pinch of red pepper flakes
Directions

Ingredients

• 1 boneless, skinless chicken breast

• 1/4 tsp salt

• 1/4 tsp black pepper

• 1/4 tsp poultry seasoning

• 300g bag of Olivieri Skillet Gnocchi

• 1 tbsp olive oil (for the gnocchi) Pesto Sauce

• 1/4-1/2 cup milk (any type, more for a creamier sauce)

• 1-2 tbsp pesto (adjust to taste)

• 2-4tbsp Parmesan cheese

• 1 tbsp light cream cheese (optional, for extra creaminess)

• 1/4 tsp garlic powder

• Pinch of salt & black pepper (to taste)

• Pinch of red pepper flakes (optional, for a little heat)

Direction

Cook the Chicken

• Dice the chicken and place it in a foil-lined air fryer basket.

• Season with salt, pepper, and poultry seasoning, then lightly toss to coat.

• Loosely cover with foil and air fry at 375°F (190°C) for 15-18 minutes, until fully cooked. Cook the Gnocchi

• While the chicken cooks, toss the gnocchi with 1 tbsp olive oil and spread it in a single layer in the second air fryer basket.

• Air fry at 390°F (200°C) for 5 minutes, shaking halfway, until golden and slightly crispy on the edges. Be careful not to overcook!

Make the Pesto Sauce & Combine

• In a small bowl, whisk together milk, pesto, Parmesan, cream cheese (if using), garlic powder, red pepper flakes, salt, and pepper to taste. Adjust seasoning as needed.

• Transfer the cooked chicken, gnocchi, and sauce into one air fryer basket. Sprinkle with extra cheese, if desired.

• Air fry at 300°F (150°C) for 2-3 minutes, just until the sauce is warmed and slightly thickened.

Serve & Enjoy
