Chipotle Chicken with Black Bean Rice

Ingredients
4 Boneless Skinless Chicken Breasts
2 cups (500 ml) Western Family orange juice
5 tbsp (75 ml) Western Family honey
1/4 cup (60 ml) Soy sauce
2 tbsp (30 ml) Orange zest, finely grated
2 tsp (10 ml) Canned chipotle chilies in adobo sauce, finely chopped
2 tbsp (30 ml) Canola oil
1 Onion, sliced
2 Cloves garlic, minced
1 Carrot, diced
1 tsp (5 ml) Ground cumin
1/2 tsp (3 ml) Ground coriander
1 tsp (5 ml) Chili powder
1 can (796 ml) Western Family tomatoes, drained
1 can (540 ml) Western Family black beans, drained and rinsed
1 cup (250 ml) Corn, frozen or fresh
500 g Uncle Bens Whole Grain Brown Rice
1/4 cup (60 ml) Cilantro, fresh, chopped
Directions

The Glaze
Simmer the orange juice, honey, and soy sauce in heavy medium saucepan until reduced to 2/3 cup, about 15 minutes. Mix in grated peel and chipotle chilies.

Cooking Instructions:

  1. Preheat oven to 400F. Season the chicken with salt and pepper and roast for 20 minutes. Brush chicken breasts with the chipotle glaze and cook for another 5 minutes. Remove from oven and brush with remaining glaze.
  2. Cook the Uncle Bens rice as per package instructions
  3. Meanwhile, in a large skillet, over med/high heat, add the canola oil. Add onions and carrots and cook for 5 minutes. Add garlic, chili powder, cumin, coriander, and cook for 2 minutes. Add drained tomatoes, crushing them as you add them and cook for 5 minutes.
  4. Add the black beans, and the corn and cook for 5 more minutes.
  5. Add cooked rice to the skillet.
  6. Serve the glazed chicken breasts with the black bean rice and garnish with cilantro. Serve.
