1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 red bell pepper, chopped
1 carrot, diced
2 sausages (sliced or crumbled)
1 can (15 oz) white beans, drained
1 can (15 oz) diced tomatoes
2 1/2 cups low-sodium vegetable or chicken broth
2 cups chopped kale or spinach
1 tsp smoked paprika
1 tsp cumin
salt & pepper to taste
fresh parsley for garnish
Directions
- Sauté onion, garlic, pepper, and carrot in olive oil until soft.
- Add chorizo and cook until browned.
- Stir in paprika and cumin, then add beans, tomatoes, and broth. Simmer 25–30 mins.
- Add greens and simmer 5 more mins.
- Season and serve with rice or crusty bread
