Halloumi and Zucchini Brochette Barbecue

halloumi
zucchini
cilantro
garlic
fresh mint
lime
extra virgin olive oil
Directions
1. Cube each halloumi and zucchini into approximately 2 x 2-cm (3/4 x 3/4-inch) pieces.
2. Mix together remaining ingredients and marinate halloumi and zucchini for at least 1 hour.
3. Divide onto 4 skewers and place on hot barbecue. Grill for 3 minutes per side, while basting with remaining marinade.
